Homemade Chili Mac
Ingredientsย ย
- 1 pound ground beef
- ยฝ yellow onion diced
- 3 cloves garlic minced
- 1 bell pepper diced
- 1 (15 ounce can) fire roasted tomatoes
- 1 (15 ounce can) tomato sauce
- 1 (15 ounce can) pinto beans drained and rinsed
- 1ยฝ teaspoon salt
- ยฝ teaspoon ground black pepper
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon light brown sugar
- ยผ teaspoon paprika
- ยฝ teaspoon dried oregano
- 1 dried bay leaf
- 1 cup beef broth low or no sodium
- 8 ounces elbow or shell pasta
- 1 cup cheddar cheese grated
Toppings
- grated cheddar cheese

- fresh cilantro or green onion
Instructionsย
- Add the ground beef to a large skillet or braising pan. Cook over medium heat, breaking up the meat as it browns. Add in the onion and bell pepper to cook with the meat.ย
- Once the meat is fully browned and veggies have softened, add the minced garlic and cook an additional 30 seconds.ย
- Pour in the tomato sauce, fire roasted tomatoes, and pinto beans. Add in the seasonings: salt, black pepper, cumin, chili powder, garlic powder, brown sugar, paprika, and oregano.ย
- Pour in the beef broth and stir to combine.ย
- Add in the pasta and press down to ensure theyโre coated and in the liquid. Add in the bay leaf.ย
- Bring this mixture to a simmer. Cover with the lid and cook for 20 minutes on medium/low.ย
- Remove lid and cook an additional 5-10 To reduce the sauce and help thicken and to soften the noodles completely.ย
- Remove from the heat and stir in the cheeseย
